A great tea cake from Wales, courtesy of Val, who wrote to her mother in Swansea to get this recipe for us.

1 beaker of sugar
2 beakers of mixed fruit
2 beakers of self-raising flour
1/4 teaspoon mixed spice*
1 egg
Sherry
Beaker of hot tea

Soak sugar, fruit, spice and nutmeg in enough sherry to cover it. Leave to soak for two hours then pour the hot tea over this and leave overnight. Next morning, beat egg and add to mixture. Add self-raising flour, mix well. Grease and flour a loaf tin and pour in mixture. Cook in a pre-heated oven, gas 2-3 for 1 1/2 hours. Turn off oven and leave cake in for a further 1/2 hour. Turn out on rack to cool.
