1 teasp of Pure Lemon Essence (if you like it)
Cut bread up into small pieces, put into a basin
and cover with milk. Leave to soak, usually takes 2/3 hours.
Then squeeze until dry and beat with a fork. Mix with suet (or
marg/butter) sugar, dried fruit, spice and peel (if this is
being added. Stir in eggs. Press mixture into a well greased
tin or oven dish and bake on reglo 5 gas or 400oF for about
1 hour. Just watch to see it does not overcook. (Also some ovens
may take a bit longer or shorter time). If you like you can
sprinkle some granulated sugar on top before going into the
oven
