Please feel free to forward to us your favorite British recipes. We will do our best to keep them up to date and seasonally appropriate. Enjoy!

Bread Pudding

  • 1 lb Stale Bread without crusts (If possible do not use cut loaf bread)
  • 6 ozs suet (if not available margarine/butter about 4 ozs)
  • 4 ozs Demerara Sugar
  • 8 ozs Mixed Dried Fruit
  • 2 eggs & Milk
  • 1 teasp mixed spice ( or what you like to taste)
  • 1 oz Mixed Peel (if you like it)
  • 1 teasp of Pure Lemon Essence (if you like it)

    Cut bread up into small pieces, put into a basin and cover with milk. Leave to soak, usually takes 2/3 hours. Then squeeze until dry and beat with a fork. Mix with suet (or marg/butter) sugar, dried fruit, spice and peel (if this is being added. Stir in eggs. Press mixture into a well greased tin or oven dish and bake on reglo 5 gas or 400oF for about 1 hour. Just watch to see it does not overcook. (Also some ovens may take a bit longer or shorter time). If you like you can sprinkle some granulated sugar on top before going into the oven
